LUXX'SPICE T-BONE STEAK

Chocolate and steak? Oh yes!


It's quite funny when I start telling people about the Luxx'Spice Cacao Rub I created. "I don't think I want my [insert all savory foods here] tasting like chocolate" is what I hear. But do you know that chocolate is the secret ingredient in the best chili recipes? And no, it won't taste like chocolate. Chocolate helps offset the acidity of the tomatoes, peppers and enhances the chili's overall flavor profile by giving it rich, earthy tones. Overall, chocolate adds to the depth, dimension and complexity of flavors. It also contributes a layer of richness and helps balance the spiciness of a dish. Ready to have your mind blown? Pull out your favorite cut of steak. We chose a T-Bone here.


One thing to remember is that you don't have to be a chef or even like to cook to use Luxx'Spice Cacao Rub. It's that little miracle that requires no effort on your behalf other than a couple of simple things...and it will taste like you're in a fine restaurant!


What you'll need for Luxx'Spice T-Bone Steak:

  • T-Bone (or Filet Mignon, Rib-eye, Sirloin, Porterhouse, New York Strip) Choose one with thickness. Have at room temperature prior to cooking

  • Luxx'Spice Cacao Rub (only from Luxx Chocolat)

  • Extra Virgin Olive Oil

  • BBQ grill, Cast iron pan or broiler in oven (BBQ and cast iron covered here)

  • Option: 2 pads of creamery butter (we love our butter from local farms but you can choose Kerrygold or Land O'Lakes) sprinkled with more Luxx'Spice Cacao Rub

Directions:

  • Pour 3 TB of olive oil onto a plate

  • Cover your steak with the olive oil on both sides

  • Sprinkle a nice coating of Luxx'Spice Cacao Rub onto the steak, pat into the meat. Do on both sides (no need to leave it on like a marinade. It's ready to go immediately)

  • Time to cook!

BBQ grill:

  • Preheat an outdoor grill to high heat (about 500 degrees)

  • Place steak on the grill and sear both sides at 3 minutes each (we like our steak very rare so we are done at this stage - and we prefer not to close the lid)

  • If you want yours cooked longer, reduce the heat to medium-low and continue cooking

  • Continue to grill 3 to 5 minutes for medium-rare (an internal temperature of 135 degrees F), 5 to 7 minutes for medium (140 degrees F) or 8 to 10 minutes for medium-well (150 degrees F)

  • Put one or two pads of butter on top as soon as you remove from the oven. Sprinkle more Luxx'Spice Cacao Rub on top of the butter

  • Let your steak rest for 5-7 minutes before cutting to let the juices evenly distribute throughout the meat, yielding the perfect bite every time. Always let your steaks rest!

Cast iron pan on stove top, transferred to oven briefly:

  • Prep your pan for a minute with a little olive oil. You want high heat for the best sear on both sides

  • Sear filets 2 minutes per side on high heat, place a pad of butter or two on the steak, sprinkle more Luxx'Spice Cacao Rub on top and then immediately transfer to a preheated oven at 415° F

  • Set your timer. Bake for about 4 minutes for rare, 5 minutes for medium-rare. That’s the beauty of cast iron. It's easily transferred from stovetop to oven. If you don’t have one, get one

  • Put one or two pads of butter on top as soon as you remove from the oven. Sprinkle more Luxx'Spice Cacao Rub on top of the butter

  • Let your steak rest for 5-7 minutes before cutting to let the juices evenly distribute throughout the meat, yielding the perfect bite every time. Always let your steaks rest!
